Recipe for Sirloin Burger

Hamburgers are a classic food at any cookout. While you could just purchase premade patties or form some out of basic ground beef, this generally results in a fairly boring burger. Instead, elevate this meal and offer better flavor and more nutrition with a sirloin burger. This is a great opportunity for you to get your aging parent in on the cooking with you. If they have challenges and limitations, have them work on basic tasks such as grating the cheese or forming the patties. This will allow them to feel involved without putting them at risk.

 

What You Will Need

  • 8 ounces of sirloin steak meat
  • 8 ounces of chuck steak meat
  • 8 ounces of lamb shoulder meat
  • 4 ounces of grated smoked Cheddar
  • Kosher salt
  • Mayonnaise
  • 4 hamburger buns
  • A sharp knife
  • A cutting board
  • A food grinder
  • A medium bowl
  • An instant-read meat thermometer
  • A charcoal grill

 

What to Do

  • If not already done, grate the Cheddar cheese and set aside for later use
  • Attach the coarsest die of the food grinder, and place a medium bowl at the end to catch the meat as it falls
  • Run the sirloin through the grinder
  • Run the chuck steak through the grinder
  • Run the lamb shoulder meat through the grinder
  • Lightly salt the meat and mix it together with your hands evenly, making sure to distribute the different types of meat all over
  • Place the bowl in the refrigerator uncovered
  • Allow to sit in the refrigerator for two hours
  • Fill the grill with charcoal and light it, allowing it to slowly come to a burning state where the coals are ashy white and are spread as evenly as possible and the grate is set low over them
  • Remove the meat from the refrigerator
  • By hand, shape the meat into 4 patties about 3/4 of an inch thick and around 6 ounces
  • Sprinkle both sides of each patty with salt
  • Place each patty in turn, or two at a time depending on the size of the grate, on the grill
  • Do not touch the patty for 2 minutes as it cooks
  • Flip the burger and cook the other side
  • Continue flipping every two minutes until cooked
  • Burgers will reach an internal temperature of 135 degrees F on the meat thermometer when fully cooked
  • Do not smash down the patties while cooking as it will squeeze the juice out of the meat
  • Remove the patties and place them on a clean plate to rest
  • Place the buns, cut side down, on the grill
  • Cook the buns for 1 to 2 minutes
  • Place the buns now cut side up on a platter
  • On the top buns, sprinkle the Cheddar cheese
  • On the bottom buns, spread a little mayonnaise
  • Place the still hot patties on the top buns
  • Place the bottom buns on the patties so that you have a burger, upside down
  • Allow to sit for one minute
  • Flip the burgers right side up and serve
