What You Will Need

• 1 8 ounce package of sliced tempeh

• 1 zucchini

• 1 red bell pepper

• 6 cloves of garlic

• 1 medium onion

• 1 pint of red cherry tomatoes

• 1/2 a teaspoon of garlic powder

• 2 teaspoons of salt

• 1 1/2 teaspoon of black pepper

• 3 tablespoons of veggie broth

• 2 tablespoons of olive oil

• 12 ounces of a dark cola

• 2 tablespoons of soy sauce or tamari

• 2 tablespoons of barbecue sauce

• 2 tablespoons of vegan Worcestershire sauce

• 2 teaspoons of paprika

• Slow cooker

• Small bowl

• Sharp knife

 

What to Do

• Puncture each cherry tomato with a fork

• Slice the red bell pepper into 12 pieces

• Slice the zucchini into at least ten pieces, making sure each slice is not too thick

• Cut one end off of the onion and peel it

• Use a sharp knife to slice the onion into medium-thick slices

• Chop the ends off the garlic and remove skin

• Slice the garlic into small pieces

• Turn on the slow cooker and set for low heat

• Add the veggies, tempeh, garlic and onions to the slow cooker

• Mix the bell pepper, pepper, cumin, garlic powder veggie broth, olive oil, cola, soy and Worcestershire sauce and barbecue sauce all together in the small bowl, mixing well

• Pour the mixture over the veggies and tempeh and mix well, making sure to coat the veggies as much as possible

• Cook for six to eight hours

• Remove from slow cooker, plate and serve
